This is going to be short and sweet.
I love making my crackers. It is effortless and very delicious.
Whenever possible I would rather make whatever I can from scratch. Making things at home is usually cheaper, and healthier. Homemade foods are just better for you.
When you make food at home you have control over what goes in it, and it is made with love. This makes it even better!
Healthy organic crackers have become very expensive. When I bought my last box of crackers it was over $5 for a box that was 1/3rd full. Really, how can they get away with this? You buy a box that is about 10 inches tall, there is a bag inside that is about 8 inches tall and holds about 3 inches of crackers. The rest of the bag is air!
After I got over the shock of this I thought... how hard could it be to make my own?
After doing some research I found a very simple method for making sourdough crackers.
Here is all I do.
Preheat oven to 325 degrees and line a baking sheet with parchment paper.
Melt 2 tablespoons of butter in a small bowl. Set it aside to cool.
In a bowl, measure out 200 grams of discard sourdough starter.
To the discard put in a pinch of salt and about 3 teaspoons of herbs. ( I bounce back and forth between Rosemary and Herbs de Provence).
Pour the butter into the bowl of discard and herbs. Then stir it all together.
Pour the batter onto the parchment paper and smooth out with an off-set spatula.
Sprinkle with salt if you like.
Bake for 10 minutes, then remove from the oven and score the crackers with a knife.
Place back in the oven for 20 to 40 minutes (every oven is different so watch closely checking every 10 minutes) until the crackers are golden brown.
Let them cool and break the crackers along the score lines you created.
You're done, that's it! They are soooo good. I find that the hardest part is letting them cool before I try them.
